pandan chicken

i tried to cook pandan chicken (lok thian style) again last night. my first attempt tasted of only coconut because some recipes said to use coconut milk. this time i didn't use coconut milk and i put corn. it was much closer to the original. yay. not enough salt and pepper though.



i miss lok thian food. and other food also, of course. 3 more months...

ok, the recipe very agak-agak one. sorry. i cut the meat off 4 drumsticks. i added less than one teaspoonful each of: light soy sauce, sugar and sesame oil. salt and pepper to taste. (hope i din forget any ingredients) mix well.

to wrap in pandan leaf, i did it like making a paper star. make a loose knot and form a pocket where u can stuff chicken in. make sure the holes r not too big so the chicken don fall out. add some corn. add more chicken to cover the corn. then tuck the loose end under one of the folds like how u would end the paper star. i marinaded for about 2 hours.

deep fry til the pandan erm, looks like lok thian one i guess. haha. i was afraid mine wasn't cooked on the inside so i unwrapped it and some was not cooked so i grilled it for a while. the end.
